*UPDATE! I wrote this post way back before we knew the extent of Harvey's literal life threatening peanut allergy. If I was to make these again (and I should!) I'd use homemade sunbutter and Enjoy Life brand chocolate chips.
Anyway. After all that, I'm super excited to share my most favorite sweet treat to make. They're super duper simple, easy to make and, of course, delicious.
For starters, these guys require only one dish to be dirtied. Can I hear a "hallelujah!"? Who likes dirty dishes? No one. And if you're anything like me, you'll avoid any recipe with too make ingredients or steps for fear of dirty dishes. But rest easy, friends, one sauce pan and that's it!
I have to say, too, these little nibbles are just so satisfying. I can't quite figure out why... Maybe it's the peanut butter or maybe the chocolate... Or probably a combination of both. Who knows. But what I do know is that I'm a girl who generally needs to eat three times my weight in sweets after dinner in order to feel satisfied, but somehow just a couple of these little guys do the trick. So they've been instrumental for me in cutting down my serious sugar addiction. Anyone out there feel me?
Alright, here it goes!
Chocolate P-Butt Sammies
Ingredients
1/2 bag chocolate chips (or equivalent amount of your favorite solid chocolate)
1 cup natural peanut butter (or other nut/seed butter)
1 tbsp coconut oil
Recipe
Start by scooping the peanut butter into 12 disk shapes on a tin foil covered baking sheet. They should be about the size of a golf ball around. I usually plop the p-butt on the pan and then smash and smooth it out with the back side of a spoon.
Next, add half of your chocolate and half of your coconut oil to a sauce pan and melt together. Once melted, add a layer of chocolate to the top of each p-butt disk. Place the pan in the freezer and let these harden- about 20 minutes (or until you get around to completing the next step).
Then you'll remove them from the freezer and flip each disk over so that the hardened chocolate is on the bottom. Repeat the previous step to make a sandwich of chocolate, peanut butter, chocolate. Set them in the freezer for another 10 minutes and voila!
I usually store mine in the freezer in a Tupperware and grab one or two after dinner every night to satisfy my sweet tooth. Yummmm.
