My little Harvey babe is allergic to dairy, and since I'm still breastfeeding I am, in effect, basically allergic to dairy as well. I'm not allowed to eat it! So sad.
So what's a girl to do when she wants delicious food without butter, milk or cheese?
THIS is what a girl does.
I came up with this recipe after wanting BBQ pork nachos from a restaurant but when I ordered them without cheese I was left with mostly chips, lettuce and a few tomatoes. It made for a pretty boring meal. But enter in some spice and extra flavor and a little pizzaz and bam, we've got ourselves a dairy-free winner, folks.
Here's what you need:
| Pork

| Apple cider vinegar
| Tortilla chips

| Romaine Lettuce

You'll learn pretty quickly about me that I don't measure things and I don't really care what brand/type of item you use. I also don't think this is a recipe that you can get wrong... it's your own interpretation that matters! I'm sorry if that makes you mad, but I'm kinda not sorry too. hehe.
Here's what you'll need to do:
Step 1- Plop your pork in your crock pot and cover it with a couple table spoons of vinegar and maybe a 1/2 cup of bbq. Just eyeball it. You want your meat to have a little liquid to cook with, but not so much that it's swimming. And don't freak out about not enough sauce... we will add more in a minute.
Step 2- Once that cooks up, shred your meat and add in more bbq sauce until you get your desired sauciness. Mmm look at that beautiful glossy brown pork meat (and my messy crock pot).
Step 3: Cut up your toppings and pile them on to your liking! (Beware. Fresh jalepenos are HOT. I always underestimate their hotness. But the avocado and tomato do cool them off).
And that's really all there is too it! Now, just enjoy :)
This was the plate my husband made. I thought his looked more fun than mine.
