Green Curry Chicken Skillet Recipe


I can't take much credit for this recipe. My sister came in town not too long ago and this meal was her brainchild masterpiece. But then she's MY sister so I can have a little credit, right? It's super simple, fairly quick and the sauce is what makes it AHmazing... it's a Trader Joe's green curry sauce. Hopefully, for you, there's a TJ's nearby! If not, I'm sure there's some sort of other (maybe not as good) curry sauce you could find.

Ingredients:
10-12 small red potatoes
1 green pepper
1 red pepper
1 onion
2 zucchini
2-3 chicken breasts
Garlic
Trader Joe's Green Curry Sauce
Coconut milk
Coconut oil
Minute Brown rice


Directions:
1) Start by 'frying' your chopped potatoes in a thin layer of coconut oil on the stovetop in a large skillet or Dutch oven. The smaller you cut them, the quicker they will cook, so I aim on the smaller side.
Cook them till they're almost done then remove from the pan and set aside.
2) In your potato pan, add a little more coconut oil, diced onion and 1 clove of garlic (I like to use TJ's packaged, frozen garlic cubes). Cook till onions are translucent.
3) Add cut peppers and zucchini to the onion and garlic.
4) Once the veggies are cooking, add your cut chicken to a separate, smaller skillet with a little oil. I like to cut it very thin before adding it to the pan that way it cooks faster and you get a higher ratio of bites with chicken in them!
5) After the chicken has cooked, add it to your big skillet with the veggies- they may not be cooked through yet, but that's ok. Add your potatoes back in as well along with the jar of green curry sauce and a couple splashes of coconut milk. Stir, cover and let simmer together about ten minutes.
6) While this is simmering, prepare your minute rice.
And when it's all done, it's ALLL done and you can dig in and enjoy!




I like to have a nice layer of rice in the bottom of my bowl topped with a nice layer of chicken and veggies. Ben likes to stir everything together into a big mess in his bowl.
However your fancy, it's sure to taste delicious!
