Paleo-ish Summer Strawberry Salad


My husband has started doing the paleo diet... poor guy. Ha. He's losing weight while I'm gaining the baby pounds! Anyway... I should say he's kindof paleo, but not all the way- hence the feta cheese. But, I mean, it's feta! You NEED feta on this salad. And are strawberries allowed in paleo?? I don't know; but how bad for you can they be?!

So we're paleo cheaters, whatever! Either way this salad is delicious! And the best thing about paleo is that bacon is allowed!! Yay for bacon! 

Ok, about that salad then...

All of the ingredients are as follows:
  • Romaine lettuce
  • Iceberg lettuce
  • Strawberries
  • Honey roasted pecans (recipe below)
  • Bacon
  • Feta cheese
  • Raspberry vinaigrette

I'm proud to say I made the honey roasted pecans all by myself! Before you give me too much credit... They were super easy. I used this recipe
Here's how you can do it, too!

Ingredients:
  • 2 cups Pecan pieces
  • 1/4 cup Honey
  1. Roast the pecans in an even layer on a baking sheet for 12 minutes at 350 degrees
  2. Add roasted pecans and honey to a saucepan on medium-high until simmering and foamy 
  3. Spread pecans evenly on wax paper and allow to cool

The rest is super simple. Just throw everything in a bowl, grab a fork and enjoy! Maybe on your front porch... with some lemonade?? Mmmmm Summer :)
