My husband picked out this recipe, actually. He LOVES the jalapeno chicken sausage from Trader Joe's so he asked me to make a soup with it. We adapted our recipe based off of this one, but of course, I think my way is extra special! It's really simple and makes A TON of delicious food.
Here it goes!
Ingredients:
1 pkg. Trader Joe's Jalapeno Chicken Sausage (or a similar substitute)
2 cloves garlic
1 onion
1 can fire roasted tomatoes
5-6 cups chicken broth (we like low sodium)
2 zucchini
1 green bell pepper
8-10 oz. gluten free pasta (or your preference)
fresh basil, parsley, salt and pepper
Directions:
1. Sautee your garlic and chopped onions together with a bit of oil. After the onions have browned, add in the cut sausage. The TJ's kind comes pre-cooked so we're just looking to brown it a bit. If your sausage is not pre-cooked you will want to make sure it is fully cooked before this step.
2. Start cooking your pasta in a separate saucepan, to package directions.
3. Add your canned tomato, broth, chopped zucchini, and chopped pepper all to the sausage pot.
4. Season to your liking and simmer until zucchini and peppers are tender, 20-30 minutes. Add water if needed.
5. Remove from heat and stir in your cooked pasta. And. You. Are. Done!
My husband liked parmesan cheese on top, but then, he likes parmesan on anything- so take it or leave it. I thought it was great without any extras!
