Buffalo chicken lettuce wraps and sweet potato fries

In the Ruhl house, this meal is one of our favorites. For starters, we LOVE fries (especially homemade) and we LOVE buffalo sauce. Not to mention the chicken cooks in the crockpot and is super easy. Lots of wins with this one!



Lettuce Wrap Ingredients:
2-3 Chicken breasts
1 cup Buffalo Sauce
1/2 cup Ranch Dressing
1 tsp Cayenne Pepper
Romaine Lettuce
Toppings of choice: Feta cheese, Colby Jack cheese, Banana Peppers, extra ranch, extra buffalo sauce, etc...

Sweet Potato Fry Ingredients:
2-3 Sweet Potatoes
Spray Oil (I like EVOO or Coconut)
Seasoned Salt


To make the chicken:
1|Place thawed chicken in crockpot with just a little bit of your buffalo sauce (a couple tablespoons), ranch dressing, and cayenne pepper (The buffalo sauce will turn watery and runny if we put it all in at the start, so we're holding off). I like to make a little extra chicken for leftovers, but you can judge how much each person will eat (I usually make this for 2 people).

2| Let the chicken cook on low for 5-6 hours, or high for 3-4 hours- depending on the thickness of your chicken breasts.

3| Remove chicken from the crockpot- careful it's nice and tender! And shred with 2 forks. Then add in the rest of your buffalo sauce to taste. The more you add, the more flavor! We like a lot :)

4| Let cool and serve in a romaine lettuce wrap with your choice of toppings! This time we did ranch, freshly shredded Colby Jack cheese and banana peppers, but we really love feta with them too.

To make the fries:
1| Cut your potatoes to the size of a small fry (depicted). You will want them to be as uniform in size as possible so they all cook up at the same time. The smaller they are, the better and faster they will cook as well.

2| Lay them out in one layer on a very well oiled baking sheet. You don't want fry overlap! One layer is very important. Then add a generous dose of seasoned salt on top of the fries and spray again with your oil- you want them to all be shiney.

3| Bake at 425 for 20 minutes, then flip and bake for 10-15 more minutes depending on the size of fry. Feel free to re-spray after flipping if they look like they could use some moisture- The oil is what will make them nice and golden brown.

4| Enjoy with lots of ketchup, Of course!
