My husband, Ben, and I are always looking for new recipes to try that are simple, inexpensive and healthy. If you're looking for meals that are easy to make, easy on the palate and easy on the budget, here's a real good one.
Tonight we tried a Martha Stewart recipe found here. I do a pretty good Martha impersonation so I feel a real connection with her. Girl knows what she's doing!
I tweaked the recipe juuust a little to fit our preferences. Here's my version (probably better than Martha's):
-1 bag gluten free penne (only $2 and is 100% brown rice)
-1 can pumpkin puree
-1/2 cup half and half
-1/3 cup parmesan cheese
-1/2 tsp red pepper flakes (mmm... we like it spicy)
-fresh basil
-garlic salt (I'm thinking about using real garlic one day)
-sea salt
-1 cup "pasta water"
Basically, while the pasta was cooking, I added all the other ingredients (except basil) to a sauce pan over medium heat. The recipe says to save some of the "pasta water" before straining the penne- but I like to cut corners, so I just scooped 1 cup of water out of the pot while the pasta was cooking and added it to my saucepan. Once the sauce looked all nice and simmery I added the basil and voila!
I would also like to add that Ben was anxious to eat and feeling ornery so he timed my dinner making from start to finish. I bet him I could get the food cooked in 15 minutes... but I lost. :(
It did only take me 20 minutes, though! Not too shabby. :)
